Winter Vegetable Soup


  • 3 turnips
  • 3 carrots
  • 3 onions
  • 1 bunch of celery
  • 3 or 4 leeks
  • 1 clove of garlic
  • 2 stalks of parsley
  • 2 cloves
  • butter
  • salt
  • pepper
  • grated nutmeg
  • 3 quarts of water


Scrape and slice turnips and carrots and peel onions, and fry all with a little butter until a light yellow; add celery and leeks cut in pieces; stir and fry all the ingredients for six minutes; when fried, add garlic, parsley, cloves, salt, pepper and a little grated nutmeg; cover with water and simmer for three hours, taking off the scum carefully. Strain and use. Croutons, vermicelli, Italian pastes, or rice may be added.
