Wine Sauce for Game

Ingredients

  • 1/2 glass of currant jelly
  • 1/2 glass of port wine
  • 1/2 glass of water
  • 1 tablespoonful of cold butter
  • 1 teaspoonful of salt
  • juice of 1/2 lemon
  • pinch of cayenne pepper
  • 3 cloves

Instructions

Simmer all together a few minutes, adding the wine after it is strained. A few spoonfuls of the gravy from the game may be added to it. This sauce is especially nice with venison.
