Sauce for Boiled Cod


  • 1 gill of boiling water
  • 1 gill of milk
  • 2 tablespoonfuls of butter
  • 1 tablespoonful of flour wet up with cold water
  • chopped yolk of 1 boiled egg
  • 1 raw egg beaten light
  • pepper
  • salt
  • a little chopped parsley
  • juice of 1 lemon


To boiling water add milk; stir into this while boiling butter gradually, flour; as it thickens, the chopped yolk, and the raw egg. Take directly from the fire, season with pepper, salt, parsley and the lemon juice, and set covered in boiling water (but not over fire) five minutes, stirring occasionally. Pour part of the sauce over fish when dished; the rest in a boat. Serve mashed potatoes with it.
