Preserved Green Tomatoes

Ingredients

  • 1 peck of green tomatoes
  • 6 fresh lemons
  • 6 pounds of sugar, common white

Instructions

Take green tomatoes. Slice lemons without removing the skins, but taking out the seeds; put to this quantity sugar, and boil until transparent and the syrup thick. Ginger root may be added, if liked.
