Fruit Filling


  • whites of 3 eggs
  • 1/2 cupful of sugar
  • 4 tablespoonfuls of very finely chopped citron
  • 4 tablespoonfuls of finely chopped seeded raisins
  • 1/2 cupful of blanched almonds chopped fine
  • 1/4 pound of finely chopped figs


Beat the whites of the eggs to a stiff froth, adding the sugar; then mix thoroughly into this the whole of the chopped ingredients. Put it between the layers of cake when the cake is hot, so that it will cook the egg a little. This will be found delicious.
