Delicate Indian Pudding

Ingredients

  • 1 quart milk
  • 2 heaping tablespoonfuls of Indian meal
  • 4 heaping tablespoonfuls of sugar
  • 1 heaping tablespoonful of butter
  • 3 eggs
  • 1 teaspoonful of salt
  • 1/2 teaspoonful of ginger

Instructions

Boil milk in double boiler, sprinkle the meal into it, stirring all the while; cook twelve minutes, stirring often. Beat together the eggs, salt, sugar and ginger. Stir the butter into the meal and milk. Pour this gradually over the egg mixture. Bake slowly one hour. Serve with sauce of heated syrup and butter.
