Corn Meal Griddle-Cakes


  • 2 cups of sifted meal
  • 1 cup of wheat flour
  • 1 teaspoonful of salt
  • 3 well-beaten eggs
  • sour milk
  • 1 teaspoonful of baking soda


Scald sifted meal, mix with wheat flour and salt. Add eggs; thin the whole with sour milk enough to make it the right consistency. Beat the whole till very light and add baking soda dissolved in a little water. If you use sweet milk, use two large teaspoonfuls of baking powder instead of soda.
