Buckwheat Cakes
Ingredients
- 1/2 pint of buckwheat flour
- 1/4 pint of corn meal
- 1/4 pint of wheat flour
- a little salt
- 2 eggs beaten very light
- 1 quart of new milk (made a little warm and mixed with the eggs before the flour is put in)
- 1 tablespoonful of butter or sweet lard
- 2 large tablespoonfuls of yeast
Instructions
Set it to rise at night for the morning. If in the least sour, stir in before baking just enough soda to correct the acidity. A very nice, but more expensive, recipe.
