Apple Custard Puddings


  • 1 quart of pared and quartered apples
  • 1/2 cupful of water
  • 1/2 cupful of sugar
  • 2 tablespoonfuls of butter
  • grated rind and the juice of a lemon
  • 2 cupfuls of grated bread crumbs
  • 2 tablespoonfuls of flour
  • 2 well-beaten eggs


Put apples into a stewpan, with water and cook them until they are soft. Remove from the fire and add sugar, butter and the grated rind and the juice of a lemon. Have ready mixed bread crumbs and flour; add this also to the apple mixture, after which stir in the eggs. Turn all into a well-buttered pudding-dish and bake forty-five minutes in a moderate oven. Serve with sugar and cream or hard sweet sauce.
