Sago Pudding


  • 1/2 pound of sago
  • 1 quart of milk
  • 1 stick of cinnamon
  • 1/2 pound of butter
  • 1/2 pound of sugar
  • 1 gill of wine
  • 6 eggs
  • 4 ounces of currants
  • paste


Wash the sago in several waters; put it on to boil in the milk with the cinnamon; stir it very frequently, for it is apt to burn: when it becomes quite thick, take out the cinnamon, stir it in the butter and sugar, with the wine; when cold, add the eggs and the currants that have been plumped in hot water; bake it in a paste.
