Celery-Potato Croquettes


  • 1 pint of mashed potatoes
  • 1/2 teacup of cooked celery
  • 1 tablespoon of butter
  • 1/2 teaspoon of salt
  • dash of white pepper
  • 1 egg
  • cracker or bread crumbs


To the mashed potatoes add the cooked celery, season with the butter, salt, white pepper; add the yolk of the egg. Roll in shape of a small cylinder three inches long and one and a fourth inches thick. Dip them in the beaten white of egg, roll in cracker or bread crumbs and fry.
