Sauce Piquante

Ingredients

  • 2 onions
  • 1 carrot
  • 2 shallots
  • 1 scant tablespoonful of butter
  • 1 sprig of thyme
  • 1 tablespoonful of minced parsley
  • 1 bayleaf
  • 2 or 3 cloves
  • 1 tablespoonful of flour
  • a little plain stock
  • 1 tablespoonful of vinegar
  • salt
  • pepper

Instructions

Cut the onions into slices, also the carrot and shallots and put into a saucepan with the butter. While heating over a moderate fire, add the thyme, parsley, bayleaf and cloves. When the onions are golden brown add the flour, stock and vinegar. Boil again, pass through a sieve and season with salt and pepper.
