Salade de Romaine


Put crisp leaves of romaine in a salad bowl rubbed lightly with a shallot or new onion. Make the following dressing.


  • 1 hard-boiled egg
  • a little paprika
  • a pinch of salt
  • 1/2 teaspoonful of French mustard
  • 1 teaspoonful of hashed chives
  • 1 teaspoonful of hashed tarragon
  • 2 tablespoonfuls of oil
  • 3 tablespoonfuls of vinegar


Take the egg and mash it as finely as possible with a fork, add the paprika, salt, French mustard, chives, tarragon, oil and vinegar. Add this to the romaine, toss well and serve.
