Petits Pois à la Française

Ingredients

  • 1 pint of shelled peas
  • a little flour
  • 1 ounce of butter
  • pepper
  • salt
  • yolk of an egg
  • 1 1/2 tablespoonfuls of cream

Instructions

Cook the peas till tender, drain and place on the back of the fire with not quite a gill of the water in which they have been boiled, the flour and butter. Simmer for five minutes, adding pepper and salt to taste and just before taking from the fire add the yolk mixed with the cream. Serve very hot in china or paper cases.
