Rice Milk

Ingredients

  • 1/2 pound of well-washed rice
  • 2 ounces of sweet drippings
  • 1 teaspoonful of salt
  • a bit of cinnamon or lemon peel
  • 1 quart of milk

Instructions

Put the rice into two quarts of boiling water, with the sweet drippings, salt, and cinnamon or lemon peel, and let all boil gently about an hour; then add the milk, and stir the rice for about ten minutes. A little sugar or molasses may be added if you want it sweet. It makes an excellent breakfast or supper dish, and costs about fifteen cents.
