Rhubarb and Fig Jam


  • 5 pounds rhubarb
  • 1 pound figs
  • 4 pounds sugar
  • 1 lemon


Cut the rhubarb into inch pieces without peeling. Add the figs, sugar, the grated yellow rind and juice of the lemon and let stand all night. In the morning simmer for an hour. Nut meats may be added if desired.
