Alla Pollastra Salad


  • 6 lettuce-leaves
  • 3 stalks of celery
  • remains of a cold fowl
  • 1 tablespoon of vinegar
  • salt and pepper
  • 1 cup of mayonnaise sauce
  • hard-boiled egg
  • 1 tablespoon of capers
  • 6 stoned olives


Chop up lettuce-leaves and celery, cut up the remains of a cold fowl in small pieces, and mix with vinegar and salt and pepper in a salad bowl.

Pour mayonnaise sauce over, and garnish with quarters of hard-boiled egg, capers, stoned olives, and some small, tender lettuce-leaves.
