Ginger Beer

Ingredients

  • 2 ounces of powdered ginger (or more if it is not very strong)
  • 1/2 ounce of cream of tartar
  • 2 large lemons cut in slices
  • 2 pounds of broken loaf-sugar
  • 1 gallon of soft water
  • 1 large table-spoonful of the best yeast

Instructions

Put into a kettle, powdered ginger, cream of tartar, lemons, loaf-sugar, and soft water. Simmer them over a slow fire for half an hour. When the liquor is nearly cold, stir yeast into it. After it has fermented, bottle for use.
