Spring Lamb Sandwiches


  • lamb
  • 6 stalks of mint
  • 1/2 teaspoonful of salt
  • 2 tablespoonfuls of melted butter or cream
  • 1 saltspoonful of pepper


Grind sufficient lamb to make a half pint, putting through the meat grinder with the lamb the leaves from the stalks of mint. Add the salt, melted butter or cream, and pepper. Rub this to a paste and spread between toasted English muffins. Leaves of mint may be put over the top of the lamb before putting the muffins together.
