Spanish Sandwiches


  • hard-boiled yolks of 3 eggs
  • 12 boiled shrimps
  • 3 tablespoonfuls of olive oil or butter
  • 1 tablespoonful of tomato catsup
  • 2 saltspoonfuls of paprika
  • 4 tablespoonfuls of chopped parsley
  • 1/2 teaspoonful of salt
  • 4 tablespoonfuls of mayonnaise dressing


Mash the hard-boiled yolks, add the shrimps, either pounded in a mortar or chopped very fine. Add the olive oil or butter, tomato catsup, paprika, parsley, salt, and at last stir in the mayonnaise dressing. Spread this between thin slices of buttered bread, trim the crusts and cut into shape.
