Indian Sandwiches


  • 2 sardines
  • 1 teaspoonful of anchovy paste
  • dash of salt and red pepper
  • hard-boiled yolks of 6 eggs
  • 2 tablespoonfuls of olive oil


Take the sardines, remove skin and bones, put them into mortar and pound fine; add the anchovy paste, salt and red pepper, and the hard-boiled yolks, rubbed smooth; stir the olive oil into the mixture at the last. Cut bread into slices about half an inch thick, remove crusts, then cut into crescent-shaped pieces, toast, butter and cover with the mixture, serve at once.
