Deviled Sandwiches


  • 1/4 pound of cold, boiled tongue
  • 2 tablespoonfuls of olive oil
  • dash of red pepper
  • 1 teaspoonful of Worcestershire sauce
  • 1 saltspoonful of paprika
  • hard-boiled yolks of 3 eggs


Chop the tongue very fine; add to it the olive oil, red pepper, Worcestershire sauce, and paprika; mix and add the hard-boiled yolks that have been pressed through a sieve. Put this between thin slices of bread and butter, and garnish with water cress.
