Pineapple Sponge

Ingredients

  • 1 pint of grated pineapple
  • 1/3 cup of fine tapioca (a quick-cooking kind)
  • 2/3 cup of sugar
  • 1/2 teaspoonful of salt
  • juice of a lemon
  • whites of 2 eggs

Instructions

Heat grated pineapple over hot water, sprinkle into it fine tapioca, mixed with sugar, and salt; when the tapioca is transparent, add the juice of a lemon, and fold in the whites of the eggs, beaten until dry. Serve with cream and sugar.
