Mock-Crab Toast


  • 1 tablespoonful of butter
  • 1/2 pound of mild cheese, grated
  • yolks of 3 eggs
  • 1 tablespoonful of anchovy sauce
  • 1 teaspoonful of made mustard
  • 2 tablespoonfuls of lemon juice or vinegar
  • 1/4 teaspoonful of paprica


Melt butter in the blazer, turning it about so as to butter the surface thoroughly. Put in the cheese, and stir until the cheese is melted; then add the yolks, beaten and diluted with anchovy sauce, made mustard, lemon juice or vinegar and paprica. Stir until smooth. Serve upon the untoasted side of sippets of bread toasted on one side.
