Halibut Rarebit


  • 1 cup of cooked halibut, flaked
  • 1 tablespoonful of olive oil
  • a few drops of onion juice
  • 1 tablespoonful of lemon juice
  • salt
  • dash of paprica
  • 2 tablespoonfuls of butter
  • 2 tablespoonfuls of flour
  • 1/2 cup of chicken stock
  • 1/2 cup of cream
  • 2/3 cup of grated cheese


Marinate halibut with olive oil, onion juice, lemon juice, 1/4 teaspoonful of salt and paprica. Make a sauce of butter and flour, 1/4 teaspoonful of salt and chicken stock and cream. Add grated cheese and the halibut. Serve, as soon as the fish is hot and the cheese melted, on the untoasted side of bread toasted on one side.
