Bacon Sauce


  • 5 tablespoonfuls of bacon fat
  • 2 tablespoonfuls of flour
  • dash of paprica
  • 5 tablespoonfuls of vinegar
  • 1/2 cup of water
  • beaten yolks of 2 eggs


Heat bacon fat; cook in it flour and paprica; add vinegar and water; stir until boiling; then beat in the beaten yolks, and a little salt if necessary. Do not allow the sauce to boil after the eggs are added. Add to salad after it has become thoroughly cold. Good with dandelion, endive, chicory, corn salad or lettuce.
