Corn Starch Pie


  • 1 tablespoonful of corn starch
  • 2 tablespoons + 1 teaspoonful of sugar
  • 2 tablespoons of sweet milk
  • 2 eggs
  • 1 pint of boiling milk
  • 1 teaspoon of vanilla or lemon
  • pinch of salt


Beat corn starch, 2 tablespoons of sugar, sweet milk, and egg yolks together in a warm crock; stir in boiling milk; let it boil up once; then add vanilla or lemon and salt; pour this into a baked crust. Beat the white of eggs with a teaspoonful of sugar; put over pie, and brown quickly.
