Almond Jelly Cake


  • 3 coffee-cups sugar
  • 1 heaping coffee-cup butter
  • 6 eggs
  • 5 even cups sifted flour
  • 4 teaspoonfuls baking powder
  • 1 1/2 cups sweet milk
  • 1 teaspoonful lemon flavoring


Beat sugar, butter, and egg yolks together to a cream. Add flour, baking powder, sweet milk, the the whites of the eggs beaten to a stiff froth, and added last; with lemon flavoring. Bake in layers.

Almond Sauce for Filling

  • 3 pounds almonds, blanched and pounded to a paste
  • 1 1/2 coffee-cups fresh, pure sour cream
  • 1 1/2 coffee-cups sugar
  • 4 eggs (whites and yolks beaten thoroughly together)
  • vanilla


Stir all together, and add vanilla enough to drown the taste of sour cream.
