How to Prepare Isinglass Jelly

Ingredients

  • 1 1/2 ounces of isinglass
  • 2 ounces of lump sugar
  • 1/2 pint of water
  • juice of 3 oranges, and the thin pared rind of 1 orange

Instructions

Put the isinglass, with the sugar and water, into a small stewpan, and stir the whole on the fire while it boils gently for ten minutes; then remove the jelly from the fire, add the orange juice and rind; stir well together for five minutes, strain through a muslin into a basin, and set the jelly in a cold place to become stiff.
