Kidney Stew

Ingredients

  • kidney
  • 1 tablespoon flour
  • 1/2 tablespoon of salt
  • 1 saltspoon pepper
  • 3 gills stock or water
  • 1 tablespoon mushroom ketchup
  • 2 ounces butter or bacon fat

Instructions

First: Wash the kidney and remove the core, cut into thin slices; mix together pepper, salt and flour, roll kidney in it. Brown it quickly in the butter, then add stock or water; skim well and cook very slowly for two hours.
