Cocoanut Cake (Splendid)

Ingredients

  • 2 cups of sugar
  • 1/2 cup of butter
  • 1 cup of milk
  • 2 teaspoonfuls of baking powder
  • 3 cups of flour
  • whites of 6 eggs
  • 1 teaspoonful of lemon extract

Instructions

Sugar and butter beaten to a cream, slowly add milk; mix baking powder with flour, add this gradually, mixing and then beating, finally the whites beaten to a stiff froth and lemon extract. This can be made in layers (three) or baked in a square pan.

Icing

  • whites of 2 eggs
  • 1/2 pound of cocoanut
  • enough powdered sugar to make it sufficiently stiff
  • 1 teaspoonful lemon extract
