Claret Jelly

Ingredients

  • 1 ounce of gelatine
  • 1 cup of sugar
  • rind and juice of 2 lemons
  • 2 or 3 pieces of cinnamon
  • 1 1/2 pints of water
  • 1/2 pint of claret
  • 1 glass of brandy
  • whites of 3 eggs

Instructions

If Cox's gelatine or Lady Charlotte, is used it will have to be soaked first in a little of the cold water, if the leaf gelatine, boiling water can be poured on it. Put all together into a saucepan with the whites, put on the fire until it boils and then strain through a flannel bag.
