Welsh Rarebit


  • 1/2 pound cheese
  • 1/2 teaspoon of mustard
  • 1 teaspoon of grated onion
  • 2 well-beaten eggs
  • 1 tablespoon of Worcestershire sauce
  • paprika


Cut cheese very fine and then place in a saucepan and add mustard, onion, eggs, and Worcestershire sauce. Stir until well creamed and free from lumps and then pour over slices of toast. Sprinkle lightly with paprika and serve.
