Welsh Cheese Pudding


  • 5 ounces of grated cheese
  • 1 cup of bread crumbs
  • 1 cup of flour
  • 1 1/2 teaspoons of salt
  • 1 teaspoon of white pepper
  • 1 teaspoon of paprika
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of baking powder
  • 4 tablespoons of grated onions
  • 1 egg
  • 1 cup of milk


Beat to thoroughly mix and then pour in moulds or prepared pudding cloth and boil for one and three-quarters hours. Serve either hot or cold. To serve hot, use the following sauce:


  • 1 cup of milk
  • 2 tablespoons of cornstarch
  • 1 well-beaten egg
  • 1 teaspoon of salt
  • 2 teaspoons of paprika
  • juice of 1/2 lemon


Place milk and cornstarch in a saucepan. Dissolve the starch in the milk and bring to a boil. Cook for five minutes and then add egg, salt, paprika, and lemon juice. Beat hard to mix and then serve.

This dish will replace meat and be sufficient for a family of four or five.
