Virginia Griddle Cakes


  • 1 cup of corn meal
  • 1 teaspoon of salt
  • 3 tablespoons of shortening
  • 3 tablespoons of syrup
  • 1 cup of boiling water
  • 2 cups of cold water
  • 1 egg
  • 2 1/2 cups of flour
  • 2 level tablespoons of baking powder


Place corn meal in a mixing bowl and add salt, shortening, syrup, and boiling water. Beat to mix and then add cold water, egg, flour, and baking powder. Beat hard to mix and then bake on a hot griddle.
