Tomato Sauce


  • 1 cup of canned tomatoes rubbed through a sieve
  • 4 onions, minced fine
  • 1 carrot, cut fine
  • 1 fagot of soup herbs
  • 3 tablespoons of cornstarch
  • 1 tablespoon of sugar
  • 2 teaspoons of salt
  • 1 teaspoon of pepper
  • 1/4 teaspoon of mustard dissolved in 1/2 cup of cold water


Combine tomatoes, onions, carrot, and herbs with 1 1/2 cups of cold water. Cook slowly for twenty minutes and then add cornstarch, sugar, salt, pepper, and mustard.

Bring to a boil and then cook for ten minutes. Rub through a fine sieve and use.
