Salt Chowder


  • 4 ounces of salt pork or bacon
  • 1 cup of chopped onions
  • 1/2 cup of chopped sweet red peppers
  • 1 cup of chopped tomatoes
  • 1 pound of fish
  • 6 large clams
  • 2 cups of water
  • 1 teaspoon of sweet marjoram
  • 1/4 teaspoon of thyme
  • 2 1/2 cups of cream sauce
  • 1 cup of cooked peas
  • 1 cup of cooked lima beans
  • 1/2 cup finely chopped parsley
  • 2 tablespoons of butter
  • 1 tablespoon of salt
  • 1 1/2 teaspoons of pepper


Mince fine the salt pork or bacon. Place in a deep kettle and add onions, red peppers, and tomatoes. Cook slowly for ten minutes.

Then add fish, bones and skin removed, cut in one-inch blocks, clams cut in pieces, and water. Cover closely and then boil for twenty minutes.

Now add sweet marjoram, thyme, cream sauce, peas, lima beans, parsley, butter, salt, and pepper. Heat until scalding and then serve.
