Potato Croquettes


  • 4 tablespoons bacon, minced fine
  • 2 grated onions
  • 2 cups of mashed potatoes
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper


Mince fine sufficient bacon to measure four tablespoons after chopping. Place in a frying pan and add onions. Brown gently and then add mashed potatoes, salt, and pepper. Mix thoroughly and then mold into croquettes. Roll in flour and then dip in beaten egg and roll in fine crumbs. Fry until golden brown in hot fat.
