Pimento Sandwiches


  • 1 tall can of pimentoes
  • 2 stalks of celery
  • 8 stalks of parsley
  • 2 onions
  • 1 cup of cottage cheese
  • 1/2 cup of mayonnaise
  • 1 teaspoon of salt
  • 1 teaspoon of paprika


Put pimentoes, celery, parsley, and onions through the food chopper. Add cottage cheese, mayonnaise, salt, and paprika. Mix well.

Spread the rye bread with the following:


  • 4 ounces of butter
  • 2 tablespoons of mayonnaise dressing
  • 1 teaspoon of paprika
  • 1/2 teaspoon of mustard


Place in a mixing bowl and beat until a cream, then spread the mixture on the loaf and cut in thin slices. Spread the pimento mixture and cover with a second slice of bread. Cut into triangles.
