Pepper Pot


  • 2 calves' feet, cut in pieces
  • 1 pound cooked honeycomb tripe, cut in small blocks
  • 1 cup of finely chopped onions
  • 1 bunch of soup herbs
  • 1 teaspoon of sweet marjoram
  • 2 whole cloves
  • 2 whole allspice
  • 4 quarts of water
  • 3 cups of finely diced potatoes


Place calves' feet, tripe, onions, soup herbs, sweet marjoram, cloves, allspice, and water in a saucepan. Bring to a boil and cook slowly for three hours. Remove the calves' feet, remove meat from the fat, chop meat fine and return to soup, then add potatoes and tiny dumplings made as follows:


  • 1 cup of flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of thyme
  • 1 tablespoon of finely minced parsley
  • 1 teaspoon of baking powder
  • 4 tablespoons of water


Place in a mixing bowl. Mix to a dough and then work well to blend. Make into small balls the size of a large pea. Drop into the pepper pot and cook for fifteen minutes. Season with salt and pepper and then serve.
