New England Filling


  • celery
  • 1 quart of onions
  • 1/2 bunch of parsley
  • 1 1/4 pounds of stale bread
  • 1 level tablespoon of salt
  • 1 level teaspoon of pepper
  • 1 1/2 teaspoons of poultry seasoning
  • 1/2 cup of melted shortening


Put the coarse outside branches of the celery through the food chopper and add onions, parsley, and stale bread. Turn into a bowl and add salt, pepper, poultry seasoning, and shortening. Mix thoroughly and then fill into the bird.
