Lamb Haricot

Ingredients

  • 1 pint of lima beans
  • 1/2 cup of diced onions
  • 1 pound of neck of mutton cut into cutlets
  • 1 cup of canned tomatoes
  • salt
  • pepper

Instructions

Soak lima beans overnight and then look over carefully in the morning. Parboil and then place in a baking dish with onions, mutton, and tomatoes. Season with salt and pepper and add sufficient boiling water to cover all. Place in a moderate oven and bake for three hours.
