Creole Tripe


  • 4 onions
  • 4 tablespoonfuls of shortening
  • 4 tablespoonfuls of flour
  • 2 cups of strained tomatoes
  • 1 green pepper, minced fine
  • 1/2 pound of prepared mushrooms
  • 1 pound of tripe cut into inch blocks


Mince onions fine and then place shortening in a saucepan; add the onions and cook until soft, but not brown. Now add flour. Stir to blend well and then add tomatoes, green pepper, mushrooms, and tripe. Cook gently for twenty minutes and then season and serve.
