Cream of Cucumber


  • 1 large cucumber
  • 1 cup of cold water
  • 1 tablespoon of grated onion
  • 4 cups of milk
  • 6 tablespoons of flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of paprika
  • 1 quarter green pepper, chopped fine
  • 1 tablespoon of butter


Pare and grate cucumber, and then place in a saucepan and add water and onion. Bring to a boil and cook slowly for ten minutes. Rub through a fine sieve and add milk and flour. Stir to dissolve the flour, and then bring to a boil and cook slowly for five minutes. Now add salt, paprika, green pepper, and butter. Beat hard to mix.
