Cranberry Roll


  • 2 cups of sifted flour
  • 1/2 teaspoon of salt
  • 4 teaspoons of baking powder
  • 6 tablespoons of sugar
  • 4 tablespoons of shortening
  • thick cranberry conserve
  • 1/2 cup of syrup


Place flour, salt, baking powder, and sugar in a bowl. Sift to mix and then rub in shortening and mix to a dough with 2/3 cup of water or milk. Work to a smooth dough and then roll out one-quarter inch thick. Spread with a thick cranberry conserve; roll as for jelly-roll, tucking the ends in securely. Place in a well-greased baking pan and bake in a moderate oven for ten minutes. Start basting with syrup and 4 tablespoons of water. Serve the roll with cranberry sauce.
