Cousin Hetty's Fish Balls

Recipe for six persons.

Ingredients

  • 1 package of prepared shredded codfish
  • 3 cups of mashed potatoes
  • 2 tablespoons of grated onion
  • 4 tablespoons of finely-minced parsley
  • 1 teaspoon of paprika
  • 1/4 cup of milk
  • 2 tablespoons of butter

Instructions

Open a package of prepared shredded codfish and then turn into a piece of cheese-cloth and plunge four or five times into a large bowl of hot water. Squeeze dry.

Cook and then mash sufficient potatoes to measure three cups and then add the prepared fish, onion, parsley, paprika, milk, and butter. Beat hard to mix thoroughly.

Then mould into small balls; roll in flour; dip in beaten egg and milk and then roll in fine crumbs and fry until golden brown in hot fat.
