Cider Sauce (Champagne Sauce)


  • 3 tablespoons of ham fat
  • 4 tablespoons of flour
  • 2 cups of cider
  • salt
  • white pepper
  • nutmeg


Melt ham fat in the frying pan and add flour, and cook until nice and brown, then add cider. Stir until well blended and then bring to a boil. Cook slowly for five minutes and then season with salt and white pepper and a little nutmeg.
