Chili Sauce

Ingredients

  • 2 quarts of stewed tomatoes
  • 2 cups of finely sliced onions
  • 1 cup of finely chopped green peppers
  • 1/2 cup of finely chopped sweet red peppers
  • 1 1/2 cups of vinegar
  • 1 cup of brown sugar
  • 1 1/2 tablespoons of cinnamon
  • 2 teaspoons of cloves
  • 1 teaspoon of allspice
  • 2 teaspoons of celery seed
  • 2 teaspoons of mustard seed
  • 1 teaspoon of ginger
  • 1 teaspoon of mustard
  • 4 tablespoons of salt

Instructions

Place in a preserving kettle, stir to thoroughly mix and then cook until very thick. Cool and then rub through a fine sieve.

Pour into sterilized jars and adjust the rubber and lid and seal. Process for twenty minutes in a hot water bath. Remove, cool and then store in a cool, dry place.
