Celery Puree


  • 1 pint of diced celery
  • 1 cup of cold water
  • 1 cup of stock
  • 1 cup of milk
  • 2 tablespoons of flour mixed with a little milk
  • seasoning
  • salt and pepper
  • 1 tablespoon of chopped parsley


Cook celery in cold water until tender and then put through a sieve and add stock, milk, flour, seasoning, salt, pepper, and parsley. Serve.
