Boston Baked Beans


  • 1 pint of beans
  • 1/2 pound of salt pork, cut into two-inch blocks
  • 1 cup of stewed tomatoes rubbed through a sieve
  • 4 tablespoons of molasses
  • 1 teaspoon of salt
  • 1 onion, chopped fine
  • 1/2 teaspoon of pepper
  • 1/4 teaspoon of mustard


Soak beans in plenty of cold water overnight and in the morning carefully wash and place in a saucepan and cover again with water. Bring to a boil and cook for ten minutes, and then drain and place in a casserole or baking dish. Add the rest of the ingredients. Mix well and then add sufficient water to cover. Bake in a moderate oven for three hours.
